Comfort food showdown: lasagna vs. chicken alfredo? Which is the winner? If you’re cutting carbs, you might think both these delicious dishes are off the menu, but not so.
Today, we combine two comfort classics: chicken alfredo and lasagna, in a deconstructed keto chicken alfredo lasagna recipe. This one has it all! It's easy to make, and you can enjoy it anytime with zero guilt!
Lasagna + Alfredo Sauce = A Perfect Match!
Ask anyone about their favorite comfort foods, and there's a good chance chicken alfredo and lasagna will make the list. Why? Both are delicious and oh-so-satisfying.
Today, we've fused chicken alfredo with lasagna (and ditched the carbs). This isn't exactly a traditional Italian dish, but the modern fusion perfectly combines the best elements of lasagna and alfredo pasta into something unstoppably delicious.
Lasagna—the layered pasta dish—originated in ancient Rome. Layered pasta dishes were documented in the very first cookbooks and recipe records.
Over time, the dish evolved, particularly in Naples, to a classic red-sauce lasagna dish (a.k.a. Lasagna al Forno). This staple meal made the most of indulgent ingredients in an unbeatable combination.
Traditional Italian-style lasagna is made with ragù (meat sauce), béchamel (a creamy white sauce), and Parmigiano-Reggiano cheese. In the U.S., recipes often call for ricotta and mozzarella cheeses to add texture, flavor, and signature cheesiness for which this dish is known.
Alfredo sauce also originated in Rome. In the early 1900s, Fettuccine Alfredo was invented by an Italian restauranteur, Alfredo di Lelio. The story goes that his wife gave birth and didn't have an appetite. He could entice her to eat with a simple combination of butter, parmesan, and pasta water.
Today’s alfredo sauce has become a staple on Italian menus. Often, cooks incorporate cream and other cheeses for even more cheesy richness. The resulting dish is served with thick fettuccine pasta for an indulgent treat.
Chicken is often added to alfredo to make the dish even heartier and higher in protein. It helps this meal stick to your ribs and stay full and satisfied for a long time.
However, unless you’re carb-loading before a run (and even then, it’s not recommended), alfredo and lasagna are both dishes that generally tend to be a bit heavy—as in, unbutton the top button of your pants and don’t make any plans.
We wanted to reimagine these dishes into one fun, upscale, guilt-free dish you can enjoy any time a craving hits—no carb coma afterward!
Our deconstructed keto chicken alfredo lasagna is made with zero net carb It’s Skinny Pasta, for all the same flavors and mouthfeel of your favorite dishes! This dish is customizable, comforting, rich, and ready to enjoy any day of the week!
Cutting Carbs with It’s Skinny
If you're looking for the perfect ingredient to help cut carbs, Skinny is IT! For our deconstructed lasagna, we used thick Pappardelle noodles. These are the ideal choices for a serious sauce!
It’s Skinny noodles have ZERO net carbohydrates and only 9 calories per pack. This means you can enjoy them however and whenever you like. They’re plant-based, keto-friendly, and gluten-free. No matter your preferred eating style, It’s Skinny has you covered.
So how did we do it? How did we take out the carbs but keep the pasta? There’s a special ingredient called konjac. The root of konjac is similar to a radish or turnip but very high in a particular type of fiber called glucomannan.
Glucomannan has a reputation for keeping blood sugar levels steady, so it's an excellent solution for anyone watching their weight or looking for low-carb options in their meals.
The fibrous konjac root is an excellent base for pasta (sometimes known as Shirataki pasta). Although it hasn't been widely known in the U.S. until recently, it's long been used in Asian countries for food and medicine.
We've created the most delicious, easy-to-use, spot-on shirataki pasta out there. To prepare It's Skinny, tear open the pack, drain off the liquid, and add the pasta to your other ingredients (no need for boiling water and dirtying another pan)!
The pasta heats up with the other ingredients for 3-4 minutes and is ready to enjoy! Perfect for those days when you want to cook up something quick and easy but don't want to derail your hard work on keto.
Choose your favorite shape:
· Couscous
· Orzo
No matter which type of noodle "speaks" to your heart, you can enjoy it with It’s Skinny.
They say the secret to staying on track with any eating style (keto, low-carb, low-calorie, and so on) is to avoid deprivation, and It's Skinny is the perfect way to fill up with zero deprivation.

Want to get in some more veggies? Try spinach!
Chicken spinach alfredo lasagna is pretty classic. The leafy green goes very well with the creamy sauce and chicken. You can add quite a bit of spinach to your deconstructed lasagna recipe, and it will still be amazing.
Spinach chicken lasagna alfredo (or chicken and spinach alfredo lasagna—however you want to say it) is one of those perfect dishes you can feel really good about. The nutrition powerhouse gives you extra iron, magnesium, folate, and vitamin C. So, by all means, add it to your recipe!
What other vegetables go with keto chicken alfredo lasagna?
While spinach is a fabulous choice for almost everyone, plenty of other veggies can boost the nutrition and add to the filling factor of your keto chicken alfredo lasagna recipe. Try some finely diced red bell pepper, broccoli, sauteed onion, or even zucchini.
We’d be remiss to leave out mushrooms (even though they’re technically not a vegetable). Sauteed mushrooms add depth and additional meaty satisfaction to this yummy dish. Not a mushroom fan? You could also try canned artichoke hearts for an interesting texture and flavor.
Do I need to use chicken?
If you're not a chicken fan or are out of pan-seared or roasted chicken at the moment, you can use another protein. Ground chicken will work in this recipe, as will ground turkey. Or, forgo the bird altogether and try shrimp.
Add crumbled bacon, pancetta, or even a bit of sausage with the chicken to ramp up the protein in this dish. There are many ways to make this delicious pasta your very own—and satisfy your unique tastes.

Ingredients
· 1 pack It's Skinny Pappardelle
· 2 tbsp butter
· 2 cloves of minced garlic
· 1 ½ cups of heavy cream
· 4 ounces of cream cheese, cubed
· 1 cup of grated parmesan cheese
· Italian seasoning
· ¼ tsp of red pepper flakes (optional)
· Salt and pepper
· 2 cups cooked chicken, shredded (rotisserie, grilled, or sauteed)
· 1 cup of shredded mozzarella cheese
Instructions
Step 1: Open the pack of It’s Skinny Pappardelle, drain, rinse, and set aside.
Step 2: Melt butter in a large skillet over medium heat. Add the minced garlic and sauté for about 30 seconds. Stir in the heavy cream and cream cheese—whisk until the cream cheese has fully melted. Add the parmesan cheese, seasoning, salt, and pepper (and red pepper if preferred); stir until the sauce is smooth and creamy—about 3-4 minutes.
Step 3: Add the shredded chicken to the alfredo sauce and stir to coat thoroughly. Fold in It’s Skinny Pappardelle noodles until also well covered. Sprinkle the mozzarella cheese on top of the skillet and cover with a lid. Turn the heat down to low until the cheese has melted (about 3 minutes). Alternatively, you could broil the dish in the oven for 2-3 minutes for a crispy, golden top.
Step 4: Plate up the creamy, cheesy, delicious lasagna. Garnish with extra parmesan, as desired, and dig in!
