Low-Carb Marry Me Chicken Pasta Recipe

Tender pan-seared chicken, rich sundried tomato cream sauce, and the perfect al dente bite from It’s Skinny Noodles—this dish is sure to impress, even if you're just treating yourself!
Ingredients
· 1 package It’s Skinny Pappardelle
· 2 large boneless, skinless chicken thighs (or breasts if you prefer)
· ½ teaspoon paprika
· ½ teaspoon salt
· ¼ teaspoon black pepper
· 1 tablespoon of olive oil
· 1 teaspoon minced garlic (about 3 cloves)
· ½ cup sundried tomatoes (drained and finely chopped)
· ½ teaspoon of red pepper flakes (optional)
· 1 cup of heavy cream
· ½ cup of chicken broth
· 1 tsp Italian seasoning blend
· 1 tbsp butter
· ½ cup Parmesan cheese
· Chopped fresh basil
Instructions
Step 1: Drain and rinse 1 package of It’s Skinny Pappardelle, set aside.
Step 2: Season chicken with paprika, salt, and pepper, covering both sides. Heat olive oil in a large skillet over medium-high heat. Sear the chicken for 4-5 minutes per side until golden brown and cooked through. Remove from pan and set aside.
Step 3: Reduce the heat to medium and add more olive oil (if needed). Sauté the garlic until slightly golden.
Step 4: Stir in the sundried tomatoes and red pepper flakes and cook for about 1 minute. Add the heavy cream and chicken broth, stirring to loosen any bits from the bottom of the pan. Add the Italian seasoning, butter, and most of the parmesan, stirring until the sauce is smooth.
Step 5: Add the It’s Skinny Pappardelle and let it simmer in the sauce for 3-4 minutes. The sauce should thicken up and become creamy. Slice and add the cooked chicken, letting it simmer in the sauce for the final minute.
Step 6: Plate the noodles, chicken, and sauce. Add a generous sprinkle of fresh basil and extra Parmesan cheese before serving.
