Keto Chicken Asparagus Pasta (It’s Skinny Edition)
Ready to start cooking? This simple chicken and asparagus pasta is incredibly delicious and satisfying. You won’t believe how easy it is to prepare a restaurant-worthy dinner without spending the day in the kitchen.
This dish is ideal for weeknights but beautiful enough for a Sunday dinner table or a holiday meal.
Ingredients:
· 1 pack It’s Skinny Angel Hair
· 1 tbsp olive oil
· 6 oz boneless, skinless chicken breast, sliced thin
· Salt & pepper to taste
· 1/2 tsp garlic powder
· 6–8 asparagus spears, cut into 2” pieces
· 1/4 tsp red pepper flakes (optional)
· 1/4 cup grated Parmesan
· 1/4 cup heavy cream
· 1 tbsp cream cheese
· 1 tsp lemon zest or a squeeze of lemon
· Chopped parsley or basil for garnish (optional)
Instructions:
Step 1: Open the pack of It’s Skinny Angel Hair, drain, rinse, and set aside.
Step 2: Heat oil in a large skillet over medium-high heat. Season the chicken with salt, pepper, and garlic powder. Sauté until cooked through (~4-5 minutes). Remove chicken from the pan and set aside.
Step 3: Add asparagus with a splash of water in the same skillet. Sauté for 3-5 minutes until it's bright green and tender-crisp. Add the red pepper flakes if you are using them.
Step 4: Reduce the heat to low. Add cream to the pan along with cream cheese. Stir until melted and smooth. Mix in parmesan and lemon. Taste and adjust seasoning as needed.
Step 5: Add the It's Skinny Angel Hair to your pan along with the chicken. Toss everything to coat with the sauce. Allow it to warm through for approximately 2-3 minutes. Garnish with parsley or basil, and serve!
