We've updated the pasta and cheese combination with decadent Gorgonzola and added a protein boost with chicken. Because we use It's Skinny pasta, you can indulge without breaking your keto progress.
Why Gorgonzola + Chicken Is the Perfect Combo
Gorgonzola is one of those polarizing gourmet foods. People either love blue cheese, or it's a hard pass. If you fall into the latter category, try our recipe with feta or another type of cheese you prefer.
But if you haven't tried blue cheese in a while, Gorgonzola is a fantastic option. Those famous blue-green veins in Gorgonzola come from Penicillium Glaucum. This is a milder mold than Penicillium Roqueforti, which is used in sharper Roquefort and Stilton.
Gorgonzola Dolce is creamier, milder, and younger, aged in just a few months. If you want a more pungent option, try Gorgonzola Picante. This cheese is aged for 3-6 months, making it sharper and firmer with a stronger flavor.
Gorgonzola happens to be one of the oldest forms of blue cheese, invented in the town named (fittingly) Gorgonzola in Milan, Italy. Only cheese made in this specific region, using traditional methods, can legally have the name Gorgonzola.
Gorgonzola adds gourmet flavor to your food without requiring a lot of prep. It crumbles and melts well. And it makes a particularly satisfying base. The creamy sauce also pairs beautifully with savory, protein-packed chicken.
This gorgonzola chicken pasta gives you a rich sauce without carb overload. It’s fast and easy to make, but thanks to this gourmet cheese selection, it also feels like a special treat!

Variations on Gorgonzola Pasta
Follow the recipe for a standard cheesy noodle dish or try a few additional ingredients to change it up. With It's Skinny, getting creative in the kitchen is easy because any of our noodles get along well with other ingredients.
If you want to try a variation, consider the following.
What about adding vegetables to this dish?
Blue cheese goes well with a variety of green vegetables. Arugula and spinach are lovely options for adding color (and increase veggie intake). Sautéed red peppers or onions are also a good choice. Sundried tomatoes are especially yummy in this dish (but check the carb count to keep yourself on track with keto).
If you like your dish a little spicier, add crushed red pepper flakes or a splash of white wine to the sauce. Many herbs are welcome here, and it's a fun way to adjust the flavor profile slightly. We use parsley, but thyme and basil also work well.
Can I use a different type of cheese?
If you’re not a fan of blue cheese, try swapping for goat cheese, feta, or brie. Consider using different varieties of blue cheese if you can’t get your hands on true Gorgonzola. Roquefort or Stilton are still great options, and with similar flavors. Or, if you want something from the U.S., try Maytag Blue.
We add Parmesan to the sauce for richness, but you could also try Asiago, which has the same nutty firmness. Pecorino Romano is another good choice—comparable to Parmesan but made from sheep's milk.
Are there other proteins that would fit this recipe?
This recipe is excellent with chicken, but it’s also surprisingly versatile. You could opt for a vegetarian version by omitting the chicken and adding tofu. Mushrooms also bring a meaty, umami boost.
Believe it or not, shrimp also goes well with Gorgonzola. Ground beef or sliced steak makes the dish feel heartier and with a “steakhouse” vibe. Prosciutto, pancetta, or Italian sausage are other options for additional flavor boosts.
