This recipe comes together fast. If you don’t have time to grill chicken or don’t have a countertop grill or grill pan, you could opt for sauteed chicken instead. Even leftover rotisserie chicken is a nice option.

Ingredients
· 1 pack It’s Skinny Spaghetti
· 2 boneless, skinless chicken breasts
· 2 tbsp olive oil
· 1 tsp Italian seasoning
· ½ tsp garlic powder
· ½ tsp salt
· ¼ tsp black pepper
· 1 cup of cherry tomatoes, halved
· ¼ cup fresh basil leaves (chopped)
· ½ cup shredded mozzarella cheese
· ¼ cup grated parmesan
Instructions:
Step 1: Open the pack of It’s Skinny Spaghetti, drain, rinse, and set the noodles aside.
Step 2: Rub the chicken breasts with half the olive oil, Italian seasoning, garlic powder, salt, and pepper. Using a countertop grill, grill pan, or outdoor grill, cook the chicken for 5-7 minutes per side until it reaches an internal temperature of 165°F (75°C). Slice the grilled chicken into strips.
Step 3: Heat the remaining olive oil in a large skillet and sauté the cherry tomatoes for 3-5 minutes until softened and juicy. Add the It's Skinny Pasta to the skillet and stir well to coat. Allow the pasta to heat through for approximately 3 minutes. Add the basil and stir.
Step 4: Plate the pasta, topping with the sliced chicken and sprinkling generously with the mozzarella and parmesan cheese. Sprinkle with extra basil to garnish and enjoy
