Easy Steak and Mushrooms with It's Skinny Rice

Looking for a hearty, filling rice dish? Look no further than this super easy steak and mushrooms dish! Tender, buttery, caramelized mushrooms and It's Skinny ZERO net carb, 9-calorie rice make the perfect base for tender, juicy steak. Serve this mushroom rice as a side dish, or make a delicious protein bowl for lunch! Whatever you decide, it's guilt-free, low-carb, and delicious!


Rice | It's Skinny
  • 1 package It's Skinny Rice
  • 2-3 tablespoons butter
  • 1/4 cup locatelli cheese, grated
  • 5-6 mushrooms, sliced
  • 1 medium yellow onion, diced
  • 2-3 cloves garlic, minced
  • 1 bunch parsley, chopped
  • Olive oil
  • Salt & pepper
  • Protein of choice (chicken, steak, etc.*)


Chop onions, garlic, and mushrooms. Toss into a pan with 2 tablespoons of olive oil and salt & pepper and saute.
Add parsley and 2 tablespoons of butter. Saute until caramelized.
Drain and rinse 1 package of It's Skinny rice, add to pan, and toss. Heat through for about 4 minutes.
Plate the rice and mushrooms, top with grated cheese.
Grill or pan-fry your steak until it reaches desired doneness. Let rest for 5-10 minutes before slicing. Add atop rice and mushroom. (*Note: this recipe uses a sirloin steak, but you can use whatever protein you like.)
