IngredientsRice | It's Skinny
- 1 package It's Skinny Rice
- 2-3 tablespoons butter
- 1/4 cup locatelli cheese, grated
- 5-6 mushrooms, sliced
- 1 medium yellow onion, diced
- 2-3 cloves garlic, minced
- 1 bunch parsley, chopped
- Olive oil
- Salt & pepper
- Protein of choice (chicken, steak, etc.*)
Chop onions, garlic, and mushrooms. Toss into a pan with 2 tablespoons of olive oil and salt & pepper and saute.
Add parsley and 2 tablespoons of butter. Saute until caramelized.
Drain and rinse 1 package of It's Skinny rice, add to pan, and toss. Heat through for about 4 minutes.
Plate the rice and mushrooms, top with grated cheese.
Grill or pan-fry your steak until it reaches desired doneness. Let rest for 5-10 minutes before slicing. Add atop rice and mushroom. (*Note: this recipe uses a sirloin steak, but you can use whatever protein you like.)
