This Greek pasta salad is packed with fresh veggies, a tangy dressing, and crumbled feta cheese, all mixed with It's Skinny rice. Ingredients
Rice | It's Skinny- 1 package It's Skinny rice
- 1/4 bell pepper, diced (~1/4 cup)
- 3 large cherry tomatoes, diced
- 1/4 cup green olives, diced
- 1/4 red onion, diced (~1/4 cup)
- 1/4 cup fresh mint, chopped (~1/4 cup)
- 1/4 cup grated Parmesan cheese
- 1/4 cup crumbled feta cheese
- 2.5 tbsp olive oil
- 1.5 tbsp red wine vinegar
- 1/8 tsp salt
- 1/8 tsp pepper

Drain and rinse 1 package of It's Skinny rice. Microwave the rice in a microwave-safe bowl for about 2 minutes until heated through. Let the rice cool, then chill in the fridge until the salad is ready to be mixed.

Dice up your vegetables - about one-quarter of a bell pepper (any color), 3 large cherry tomatoes, a quarter of a red onion, about 1/4 cup of olives (any kind), and about 20 leaves of fresh mint (about 1/4th cup). Combine in a bowl with 1/4 cup of grated Parmesan cheese.

Add the cooled It's Skinny rice to the vegetable mixture and combine. Crumble a quarter of a block of feta cheese - about 1/4th cup (but you can use more if you prefer). Mix.

Dress the Greek rice salad with 2/5 tablespoons of high-quality olive oil and 1.5 tablespoons of red wine vinegar. Season with a pinch of salt and pepper, then taste and adjust the dressing and seasoning based on your tastes.
