Ingredients
Angel Hair | It's Skinny- 1 package It's Skinny Angel Hair pasta
- 1 dozen little neck clams
- 1/2 cup fresh Italian parsley
- 2 cloves garlic, diced
- 1/2 shallot, diced
- 1 teaspoon lemon zest
- 1-2 teaspoons red pepper flake (to your taste)
- 1/2 cup clam meat
- 1/2 cup dry white wine
- Olive oil
- Butter
- Parmesan cheese
Directions

Dice 1/2 of a shallot, 2 cloves of garlic, and 1/2 cup of fresh Italian parsley. Set aside in a bowl. Open clam meat, set aside in a bowl. Drain and rinse 1 package of It's Skinny Angel Hair pasta, set aside.

In a pan, heat 2 tablespoons of olive oil and 2 tablespoons of butter. Saute aromatics - shallot, garlic, parsley, and red pepper flakes until tender.

Add the clams to the pan and toss to coat. Add 1/2 cup of dry white wine (don't add the wine until the shallot and garlic are a little browned). Cover and let cook unitl the clams open.

Once the clams are opened, remove and set aside. Toss 1/2 cup of clam meat into the same pan and an additional 2 tablespoons of butter.

Add It's Skinny Angel Hair pasta, 1/4 cup parmesan cheese, and a handful of chopped parsley. Toss and mix until the butter is melted and everything is well combined and heated through.

Dish up the pasta in a bowl and arrange the clams around the pasta. Top with fresh lemon zest and more parmesan cheese.
