If you prefer a more delicate pasta, Angel Hair is a great choice, too. Now…as we said, if your heart is set on Rice, we say go for it! Break the rules!

What vegetables would go with steak and mushrooms?

Almost any and every veggie tastes great with creamy sauce. Most go well with mushrooms and steak, too. If you're trying to get more vegetables into your meals, this creamy pasta dish is the perfect opportunity. The simple ingredients are great.

A few ideas that go well with this recipe? Broccoli, spinach, and bell peppers are especially well-suited to the other flavors here. Red bell peppers are a little sweeter, but green ones are perfectly delicious, too. Any type of onion—red onion, yellow onion, even shallot would be great. Add other fresh herbs like rosemary, fresh parsley, or sage.

Can I skip the steak?

The juicy steak pairs well with the mushrooms and sour cream sauce, bringing the dish together. However, if you'd like to omit the steak, you could use sliced portobello mushrooms for a meaty-tasting vegetarian swap (be sure to switch the chicken broth to vegetable).

You could also use chicken breast in place of steak or any other protein that you prefer. Beef has plenty of iron and other essential minerals like zinc and selenium. If you don't have any steak on hand, you could also use another cut of beef here—ground beef would still be delicious, but be sure to brown the meat thoroughly.
