Spaghetti | It's Skinny
  • 1 package It's Skinny Spaghetti
  • 1/4 cup guanciale, diced
  • 1 tbsp black pepper
  • 1/2 cup parmesan cheese
  • 2 egg yolks
  • 1 tbsp Cold water
  • Basil and parsley for garnish


Drain and rinse 1 package of It's Skinny Spaghetti, set aside.
Dice up guanciale into small chunks. Add the guanciale to a pan and let it brown for about 5 minutes, until cooked through. Once done, drain on a paper towel and set aside. Keep the guanciale fat.
While the guanciale is cooking, separate 2 egg yolks from their whites. In a bowl, mix the egg yolks and parmesan cheese into a thick, paste-like texture.
In a pan, heat 1 tablespoon of the saved guanciale fat. Add It's Skinny spaghetti and black pepper to the pan and toss, allow to heat through for 3-5 minutes, then remove from heat.
Add cold water to the pasta to temper it, then add the guanciale pasta into the egg yolk and cheese mixture. Mix the pasta until it's nice and creamy.
Dish up the It's Skinny Carbonara on a plate and garnish with chopped basil and parsley. Dig in & enjoy!
