Linguine with Clams: A Date Night Delight

A hearty bowl of linguine and clams sits on a countertop next to a bottle of olive oil, a package of It's Skinny Angel hair pasta, and a cutting board.

Okay, so maybe two cloves of garlic on a first date isn’t the best idea—but if you both eat this delicious low-carb pasta, then there’s no love lost.

Linguine with clams is one of those classic Mediterranean dishes that feels really special. We use little neck clams, white wine, parsley, lemon, and aromatics for this traditional recipe. We ramp up the protein with a little extra clam meat (drain the clam juice) and let the whole thing come together in minutes.

If you haven’t worked with clams before, it’s really simple. Don’t be intimidated at all—these babies are so delicious. To clean clams, all you need to do is rinse them under cold water. Then, use a vegetable brush to scrub the surface of the shell.

Now, each clam should be closed. If you see one that’s open, give them a tap on the counter. If they don’t close, you’ll want to toss them out. Other than that, your clams are ready to go with a quick rinse and brush.

Clams are a really healthy source of protein. They’re incredibly high in iron and vitamin B-12, as well as zinc and other minerals. They’re high in omegas, and they offer great texture and taste. For those who aren’t fans of fish, rest assured that well-curated clams don’t (and shouldn’t) have a strong fishy taste or smell. They should taste a little sweet and remind you of the ocean.

Some people don't like the idea of creamy clams and, thus, have been put off by the idea of clam chowder. But even if you think clams aren't for you, this dish is an entirely different mollusk experience!

When combined with delicate pasta, white wine sauce, and aromatics like garlic, red pepper, lemon zest, and shallot, clams become an indulgent treat thanks to It’s Skinny. However, you don't need to feel guilty about indulging!

It’s Skinny is gluten-free, keto-friendly, and suitable for many different diets and lifestyles. Our noodles are vegan, kosher, GMO-free, and made from just a few simple, plant-based ingredients. Now, if you think it sounds too good to be true, let's talk a little about the secret ingredient that makes it happen. Meet the konjac plant.

Konjac root has been around for a long time, but most people in the United States haven’t heard of this funny little vegetable. It looks a little like a potato, radish, or turnip. For many years, people in Japan have enjoyed it as part of their diet (and used it as medicine). However, it's only recently made its way to America in the form of shirataki noodles.

For some, shirataki noodles can appear a bit intimidating. Sort of like a bad experience with clam chowder, people might have been put off by a slimy or smelly experience with shirataki noodles. After all, they come in a pouch with water, and the noodles seem a little different from traditional pasta.

But It’s Skinny Pasta does shirataki noodles differently. We have worked to perfect the texture and eliminate the smell. There's no sliminess, and our low-carb Pasta (and Rice Shape) is easy to use and so simple to cook. All you do is drain the package and add It's Skinny at the end of the cooking process. Heat it through, and you're ready to enjoy a delicious, healthy, keto-friendly meal.

Unlike traditional pasta and rice, there's no waiting for water to boil or trying to get the perfect texture. It's Skinny is ready in about two minutes. You can remake all of your favorite pasta and rice dishes your way—low-carb, light, and delicious.

We make It’s Skinny Pasta in four varieties: Spaghetti, Fettuccine, Angel Hair, and Rice Shape. Swap out traditional noodles, pasta, and rice in any dish with It's Skinny. You can have a keto-friendly low-carb meal that's ready in no time flat.

Questions About Cooking Linguine with Clams

A tattooed hand digs a fork into the center of a bowl of linguine pasta and cooked clams.

Do you have questions? Well, we have answers! Of course, we always urge you to cook It's Skinny Pasta your way. The kitchen is a great place to experiment and play around, so don't take it too seriously! But of course, guidance is always helpful, so here are a few answers to some common questions about cooking linguine with clams.

I'm not big on clams or seafood; can I swap them out?

If you can't find littleneck clams, you could look for additional canned clam meat or another type of bivalve (such as oysters, scallops, or mussels). This dish would also be delicious with another shellfish like lobster or crab.

If you're avoiding shellfish, use another protein, such as chicken. It will offer different flavors to the dish, but it will still be delicious. Vegetarians could use sauteed oyster mushrooms instead of clams in this pasta for a similar look and taste.

Can I add vegetables to this dish?

Linguine with clams is traditionally a very simple dish with few ingredients, but we always encourage you to increase your veggies! If you wanted to serve this dish alongside vegetables, it would be nice with a side of asparagus, green beans, or sauteed kale. Of course, you can’t go wrong with an Italian-style side salad.

To add some vegetable power to this meal, you could also add some olives, peppers, or sauteed spinach. Swap the shallot for a leek, white onion or scallions, if you prefer. There are recipes for linguine with clams and tomato sauce, which call for a few chopped tomatoes as well.

Can I use other varieties of It’s Skinny?

You can use any variety of It's Skinny in this delicious linguine with clams. Obviously, the classic linguine is between Spaghetti and Angel Hair. We chose Angel Hair because it goes so well with the light white wine sauce, but that’s a matter of personal preference.

For heartier sauces, Fettuccine is usually the right answer. If you're in a pinch, Fettuccine will work here too. It’s Skinny Pasta works well in any dish where you'd typically use traditional pasta or rice. Feel free to change it up!
