Ingredients
- 1 full bag (150g) It’s White Rice Blend, uncooked
- 1.5 tablespoons sesame oil (or any preferred cooking oil)
- 2 cloves garlic, minced
- 1 cup diced carrots
- 1 cup frozen peas
- 1 cup chopped bell peppers (mix of red/yellow/green for color)
- 4 tablespoons chopped green onions
- 3–4 tablespoons low-sodium soy sauce (adjust to taste)
- Optional: 2 eggs, lightly beaten
- Optional: 1 cup cooked diced chicken breast
- Optional: Sriracha or chili flakes, to taste

Serves 3–4 | Low-carb | Low-calorie | Customizable with egg and chicken
Instructions
- Cook the rice blend:Prepare the entire It’s White Rice Blend bag according to package instructions – simmer in water for 5 minutes until tender. Fluff with a fork and set aside.
- Cook the vegetables:In a large nonstick skillet or wok, heat the oil over medium-high heat. Add garlic, carrots, bell peppers, and peas. Stir-fry for about 4–5 minutes until the vegetables are tender but crisp.
- Add protein (egg and/or chicken):For egg: Push veggies to one side, pour in the beaten eggs, scramble until just cooked, then mix together.
- For chicken: Add cooked chicken and stir until heated through. Use both or either option depending on preference.
- Combine rice and sauce:Add the cooked rice to the skillet. Pour over the soy sauce and toss everything well to combine. Stir-fry for 2–3 more minutes until hot and evenly mixed.
- Finish and serve:Sprinkle with green onions and a dash of chili flakes or sriracha if desired. Serve warm and enjoy a filling, flavorful, and lighter version of a takeout favorite!
