Ingredients

  • 1 package It's Skinny Fettuccine
  • 2 fresh red bell peppers
  • 1/2 onion, diced
  • 1 clove garlic
  • 1 bunch cherry tomatoes (~8-10 tomatoes)
  • 2 tbsp olive oil
  • 1 tsp red pepper flakes
  • 1/2 cup heavy cream
  • 1/4 cup grated Parmesan cheese
  • For Garnish: Fresh basil, chopped
  • To Taste: salt & pepper

Be sure to use a non-stick sheet or parchment under the peppers and spray or rub the skin side with a bit of olive oil to get that really nice char.

Are you looking for a quick option? You can roast red peppers in your air fryer, too. Spray or rub them with olive oil and pop them in your air fryer for 10-15 minutes (keep an eye on them). Once the peppers are roasted, removing the peel is easy, but you should give them a few minutes to cool.

Can I add other ingredients to this recipe?

Roasted red pepper sauce goes with all kinds of other ingredients. Add some protein with grilled chicken breast or shrimp. Ramp up your flavors with some additional vegetables or seasonings. Spinach is a natural addition for this delicious pasta sauce. Mushrooms are also a yummy choice.

How to Cook Low-Carb Roasted Red Pepper Pasta

Instructions

  1. Open one pack of It’s Skinny Fettuccine, drain, rinse, and set it aside.
  2. Preheat your oven to 400 degrees. Line a baking sheet with parchment. Roast two red bell peppers (cut them in half and remove the seeds first) for approximately 30 minutes or until the skin is charred and blistered. The peppers should be soft. Let them cool until they’re comfortable to touch. Remove the skin and dice the peppers. Set them aside.
  3. Chop the onion and garlic and quarter the cherry tomatoes. Heat two tablespoons of olive oil in a skillet over medium-high heat. Sauté the onions, tomatoes, garlic, and red pepper flakes until tender. Add the roasted red peppers and about ½ cup of heavy cream to the pan. Stir until combined. Let the creamy red pepper sauce reduce until thickened—season with salt and pepper to taste.
  4. Add It's Skinny Fettuccine (Spaghetti or Angel Hair will also work) to the red pepper sauce. Stir to combine. Add ¼ cup of grated Parmesan cheese and fresh herbs like basil and parsley. Dish up, dig in, and enjoy!
