  • 1/4 cup guanciale, diced
  • 1 tbsp black pepper
  • ½ cup grated parmesan cheese
  • 2 egg yolks
  • 1 tbsp Cold water
  • Basil and parsley for garnish

SPAGHETTI CARBONARA IS A CROWD PLEASER

So how did someone come up with the brilliant idea of combining the most delicious foods on earth: bacon, eggs, and pasta? There are several theories.

One idea comes from the story that this was a “coal miner’s” pasta. Early Italian immigrants often ked in the coal and charcoal mines. Carbonara means “charcoal burner” in Italian; it makes sense that this would be a delicious, filling dish after a hard day’s work.

Some people theorize that the black pepper, often used to season this dish, and the small pieces of cooked pork looked like charcoal against the soft color of the pasta and eggs.

Other theories are that it was invented by and named for a popular Roman restaurant or that it was named after a secret Italian society called the Carbonari! It was served to US soldiers during WWII and appeared on many Italian restaurant menus when they returned home. The dish became popular in the mid-century, but there were definitely similar dishes incorporating pork and eggs throughout Italian regional cuisine.

No matter how it came about, we can all agree that there’s no combination quite like eggs and pork, and they go extremely well together in this dish. In our low-carb spaghetti carbonara, we use guanciale for the pork. For those unfamiliar, guanciale is a delicious, cured pork made from fatty cheeks. It’s thinly sliced and highly flavorful--a little goes a long way.

If you can’t get guanciale, you could also use prosciutto or pancetta. All three are similarly cured pork products, but pancetta comes from the pork belly, and prosciutto is from the hindquarters. Unlike bacon and guanciale, these meats are only cured, not smoked, but they all have a savory, salty, hearty flavor that really makes the dish.

Prosciutto is the most obvious swap here, and the taste is quite similar. Otherwise, you could use ham, regular bacon, or pancetta. You could even use small pieces of Canadian bacon or pepperoni. Instructions

  1. Drain and rinse 1 package of It's Skinny Spaghetti, set aside.
  2. Dice ¼ cup of guanciale into small chunks. Once diced, add it to a large skillet over medium-high heat and let it brown for about 5 minutes until it’s cooked through. Spoon out the guanciale onto a paper towel to drain and set aside. Keep the fat.
  3. As the guanciale is cooking, separate 2 egg yolks from the egg whites. Mix the yolks with parmesan cheese in a small mixing bowl. Stir the egg mixture until it reaches a thick, paste-like texture.
  4. In a pan, heat 1 tablespoon of the guanciale fat. Add the It’s Skinny Spaghetti and black pepper to the pan and stir to heat through for 3-5 minutes. Then remove it from the heat.
  5. Add cold water to the pasta to temper it. Stir in the guanciale bacon bits and egg yolk/cheese mixture. Mix it into the pasta until it’s nice and creamy (the raw egg yolks will slightly cook with the warm pasta). Dish up the It’s Skinny Carbonara on a plate. Garnish it with chopped basil and parsley. Enjoy!
