Ingredients

  • 1 package It’s Skinny Fettuccine
  • 1 boneless, skinless chicken breast
  • 2 cups mushrooms, sliced
  • ½ white onion, sliced
  • 1 red bell pepper, sliced

  • 2 cups tomato sauce
  • 2 teaspoons (4 dashes) red wine vinegar

Instructions

  1. Drain and rinse 1 pack of It's Skinny Fettuccine Pasta, and set aside.
  2. Dice the chicken breast into cubes. Prepare the veggies: slice the mushrooms, white onion, bell, and bell pepper.
  3. Add 2 tablespoons of olive oil to a pan and sauté the onions, peppers, and whole garlic cloves until soft.
  4. Add the chicken to the pan—season with salt and pepper. Add the mushrooms and allow the ingredients to cook for 5-10 minutes until they're starting to brown.
  5. Add two cups of your favorite tomato sauce and 4 dashes of red wine vinegar to the pan. Mix everything together. Add 5-6 fresh basil leaves and allow the sauce to cook uncovered for 30 minutes.
