  • 1/2 white onion, sliced
  • 1/2 red bell pepper, sliced

  • 1/4 cup baby corn, chopped
  • 5 broccoli florets, chopped
  • 1-2 stalks scallions (green onions), chopped
  • 5 medium raw shrimp, peeled and deveined
  • 1/4 cup soy sauce
  • 1-2 tbsp fresh lemon juice
  • 2 tbsp butter

We always encourage It's Skinny fans to mix things up. Try all the varieties and get creative! The kitchen is a place to experiment and have fun! Here are a few ideas if you're looking for some ways to make this low-carb shrimp stir fry your own.

Can I use frozen vegetables?

Of course! Frozen vegetables are perfectly delicious in this keto stir-fry—swap them for any fresh vegetables. They're easy to keep on hand, along with frozen shrimp and shelf-stable packs of It's Skinny. Basically, you can keep the ingredients in storage and whip a low-carb meal together any time you're feeling stir fry, but don't want to run out for all the components.

We suggest using a frozen stir fry medley—typically consisting of water chestnuts, broccoli, red bell peppers, and onions. Some blends contain snow peas, mushrooms, and other stir-fry-friendly ingredients. Of course, there are no rules that say you can't make stir fry with just broccoli, or only red peppers and onions, if that's what you like. Green beans are also a great option.

Can I use a different protein?

Not a shrimp recipe fan? While we’re huge fans of shellfish, some people avoid shrimp for a variety of reasons (taste, allergies, texture, personal preference). You can certainly omit the shrimp from this stir fry or swap it with another lean protein if you prefer.

I’d prefer rice. What can I do?

Instructions

  1. Open your package of It's Skinny Angel Hair. Drain, rinse, and set aside.
  2. Heat 1 tbsp each of sesame oil and olive oil in a large skillet or wok over medium-high heat. Sauté onions, bell peppers, water chestnuts, baby corn, and broccoli until soft and tender, about 4-6 minutes.
  3. Add half the soy sauce and the shrimp. Squeeze the juice from half a lemon into the pan (about 1-2 tablespoons of lemon juice). Cook the shrimp, stirring quickly, until they are pink and no longer translucent.
  4. When the shrimp starts to turn pink, add the butter to the pan, stirring quickly to incorporate it into the stir fry sauce.
  5. Add in your package of It’s Skinny Angel Hair, along with the remaining soy sauce. Toss to combine. Cook for about 3 minutes longer until the shrimp is done and the noodles are heated through.
  6. Dish up! Top the stir fry with scallions and any garnishes of your choice. Dig in and enjoy!
