Ingredients

  • 1 package It's Skinny pasta (any variety)
  • 1/2 cup heavy cream
  • ¼-½ cup sun-dried tomato pesto or chopped sun-dried tomatoes
  • 4-5 leaves fresh basil, chopped
  • 1/4 cup grated Parmesan cheese (more if you like)
  • 1 tbsp fresh lemon zest
  • 1/8 tsp Salt and pepper, to taste

Instructions

  1. Drain and rinse 1 package of It’s Skinny Spaghetti, set aside. (Pro-Tip: any variety of It's Skinny pasta shape will work in this recipe!)
  2. Combine heavy cream and sun-dried tomato pest in a large skillet over medium-high heat. Mix until the pest is incorporated with the cream. Bring to a simmer.
  3. Chop 4-5 fresh basil leaves and toss them into the cream sauce. Add It’s Skinny Pasta and toss to combine. Allow to heat through—2-3 minutes.
  4. Add half the grated parmesan cheese and 1 tablespoon of freshly grated lemon zest to the sun-dried tomato pasta. Toss to combine.
  5. Dish up the pasta in a bowl and garnish with the remaining parmesan cheese and a few basil leaves. Dig in and enjoy!
