Ingredients

  • 1 package It's Skinny Fettuccine
  • 5 asparagus spears
  • 2-3 tbsp lemon juice (1 whole lemon)
  • 2 tsp lemon zest
  • ½ shallot, thinly sliced
  • 2 tbsp olive oil
  • 1/8 tsp salt (plus salt and black pepper to taste)
  • ¼ cup grated Parmesan cheese

LEMON ASPARAGUS FETTUCCINE PASTA RECIPE

Instructions

  1. Drain and rinse one It's Skinny Fettuccine package and set it aside.
  2. Use a vegetable peeler to shave five stalks of asparagus. Slice half a shallot, then zest and juice one whole lemon. Set aside the lemon juice until later.
  3. Heat two tablespoons of olive oil in a medium skillet over medium-high heat. Add the shallot to the pan and sauté until translucent. Add the shaved asparagus and season to taste with salt. Add the lemon juice to the pan and sauté the lemon asparagus until tender—2-3 minute
  4. Add the It’s Skinny Fettuccine pasta to the pan. Toss ingredients to combine and add about 1 teaspoon of the lemon zest. Let the pasta cook until heated through, approximately 2-3 minutes. Add most of the grated Parmesan cheese and toss to combine.
  5. Dish up the lemon asparagus pasta. Garnish this dish with lemon zest and the rest of the Parmesan cheese. Salt and pepper to your preference, and enjoy!
