Ingredients

  • Angel Hair | It's Skinny
  • 1 package It's Skinny Angel Hair
  • 1/2 bell pepper, julienned
  • 1 small carrot, sliced
  • 1/2 onion, diced
  • 2 cloves garlic, minced
  • 1 cup mushrooms, sliced
  • 1 cup snow peas
  • 2 tbsp olive oil
  • 1/8 tsp salt
  • 2 eggs, scrambled
  • 2 tbsp Soy sauce
  • 2 tbsp black garlic oil
  • 1 tbsp sesame oil

How Can I Add Protein to this Dish?

This recipe is vegetarian, but you can easily ramp up the protein by adding any of your favorite meat or fish. We include two eggs in this recipe to give it some texture and protein (it also helps mimic the typical eggy flavor of traditional lo mein noodles), but we always welcome more.

Chicken or shrimp are two great options for this dish. It also tastes delicious with beef, which really complements the mushrooms and black garlic oil. This keto lo mein would be delicious with pork as well. It's the perfect opportunity to go through your fridge and add any leftovers!

Can I Change the Sauce?

If you're concerned about sodium, you could use low-sodium soy sauce. You could also use coconut aminos instead of soy sauce, which has a similar flavor without the salt.

We’ve found that this recipe really doesn’t need sweet sauce. The carrots, bell pepper, and snow peas have a natural sweetness. Oyster sauce could be a nice addition, and you could omit the black garlic oil, using regular sesame or even olive oil.

Instructions

  1. Open one package of It’s Skinny Angel Hair Pasta, drain, rinse, and set aside.
  2. Cut up all vegetables—the bell pepper, carrot, onion, garlic, and mushrooms (no need to cut up the snow peas).
  3. Add two tablespoons of olive oil to a pan. Sauté onions, garlic, bell pepper, carrot, mushrooms, and snow peas for 4-5 minutes. Season with salt.
  4. Whisk together two eggs in a small bowl using a fork. Move the veggies to the side of the pan and pour in the eggs. Scramble the eggs until cooked through.
  5. Add the It’s Skinny Angel Hair Pasta. Add the sauce—two tablespoons of soy sauce and black garlic sauce, and one tablespoon of sesame oil. Mix all until well combined and heat it through. Dish up and dig in!
