- 1 package It's Skinny pasta (any variety)
- 1/2 cup heavy cream
- 1 cup sun-dried tomato pesto
- 4-5 leaves fresh basil, chopped
- 1/4 cup grated Parmesan cheese
- 1 tbsp. fresh lemon zest
Drain and rinse 1 package of It's Skinny Spaghetti; set aside. (Pro-Tip: any variety of It's Skinny pasta will work in this recipe!)
In a skillet over medium heat, combine heavy cream and sun-dried tomato pesto. Mix until the pesto is incorporated with the cream, then bring to a simmer.
Chop up 4-5 fresh basil leaves and toss into the cream sauce. Add your It's Skinny pasta and toss to combine.
Add half of the grated Parmesan cheese and about 1 tablespoon of fresh lemon zest to the sun-dried tomato pasta. Toss to combine.
Dish up the pasta in a bowl, garnish with the remaining Parmesan cheese and a few basil leaves, and dig in & enjoy!
