Ingredients

  • 1 package It's Skinny Orzo
  • 1 clove garlic, minced
  • 2-3 cherry tomatoes, diced
  • 1 small jalapeno, diced
  • 1/2 bell pepper, diced (any color)
  • 1/2 shallot, sliced
  • 2 chicken thighs (boneless, skinless)
  • 1 tsp. cumin
  • 1 tsp. chili powder
  • 1 tbsp. olive oil
  • 1/2 cup salsa or pico de gallo
  • Optional toppings: shredded cheese, cilantro, sour cream, avocado, lime juice

There’s nothing quite like a good taco bowl. The taco bowl and its many variations have become a popular dinnertime staple. Most taco bowls are filled with rice, protein, and Mexican flavors like jalapeno, chili powder, tomato, and cumin. They may include veggies, cheese, sour cream, and other taco-friendly fixings.

As low-carb dieting was proven to be an effective way to lose weight, many people wanted to ditch the carb-heavy tortilla shell for a lighter taco bowl. Rice, despite also being high in carbs, became the preferred base for these bowls.

What You Need to Know About Low-Carb Taco Bowls

Now, a taco bowl is open to a wide variety of interpretations and preferences. For our recipe here, we used chicken thighs to get extra juicy, flavorful chicken. We added many of our favorite taco ingredients, like avocado, jalapenos, and cheese. But there are plenty of ways you can play around with this recipe and make it your own. Here are a few questions and answers about customizing taco bowls.

Can I use a different protein in my taco bowl?

If chicken thighs aren’t your preferred option for taco meat, you can use any protein you like in your taco bowl. This low-carb taco bowl works well with ground chicken, chicken breasts, or shredded leftover rotisserie chicken.

But don’t limit yourself to just chicken. You could make this bowl with shredded beef or pork. Ground beef is a classic option as well. You could use ground turkey or even shredded extra firm tofu. Even shrimp makes a great addition to a taco bowl, or try salmon to get some heart-healthy fats. You could also use black beans for a vegetarian version. 

What other vegetables could I include in my taco bowl?

One great part of tacos is the crunch factor. Many times, this comes from added lettuce, peppers, or crunchy veggies. Add any fresh greens or shredded cabbage to these easy chicken taco bowls to increase the yummy crunch!

As far as other vegetables for this taco bowl, consider including olives, zucchini squash, or even jicama in your taco bowl. Any type of pepper is great here—poblano or habanero would be delicious instead of or in addition to jalapenos. All the fresh taco flavors play well together. 

How can I spice this up? Are there other flavors to add?

The truth is that the sky’s the limit when customizing your taco bowl with your favorite toppings. In fact, choosing topping might be the best part of making this family favorite meal. You could try a smoky salsa or a roasted pepper sauce instead of the traditional salsa. You could swap out the jack cheese for cheddar cheese, cotija, or spicy pepper jack. Colby cheese can work well in a taco bowl, too.

Cilantro may be a polarizing flavor, and if it’s not for you, consider swapping it with parsley for a milder option. You can use any variety of onions in lieu of shallots and play with your spice mix to meet your preference. Red onion or green onions work well here. Instructions

  1. Drain and rinse a pack of It’s Skinny Orzo. Set it aside.
  2. Prepare your veggies: dice one clove of garlic, a few cherry tomatoes, one small jalapeno pepper, ½ a bell pepper, and slice half a shallot. Chop and prepare additional toppings, like cilantro or shredded cheese. Set the vegetables aside in a small bowl.
  3. Cut chicken thighs into small cubes. Season the meat with chili powder and cumin. Then, brown the chicken in a large skillet over medium heat with 1 tablespoon of olive oil. Add the shallot and diced peppers (bell peppers and jalapeno). Sauté until tender. Add about ¼ cup of the salsa to the pan and mix with a little water to make a zesty sauce. Cook the chicken mixture until the chicken is cooked through.
  4. Add It’s Skinny Orzo to the skillet. Toss the mixture to combine and cook for 3-4 minutes until the rice is heated through—dish up the chicken taco bowl. Garnish with your favorite taco toppings like shredded cheese, sour cream, additional salsa, avocado, and fresh cilantro. Dig in and enjoy!
