Lazy Low-Carb Lasagna With It's Skinny Fettuccine

Ingredients

  • Fettuccine | It's Skinny
  • 1 package It's Skinny Fettuccini
  • 1 clove garlic, minced
  • 1/2 white onion, diced
  • 2 tablespoons olive oil
  • 1/2 lb. ground beef
  • 1/8 tsp Salt & pepper, to taste
  • 1 cup your favorite tomato-based pasta sauce
  • 1/4 cup fresh basil, chopped
  • 1/4 cup ricotta cheese
  • 1 cup fresh mozzarella cheese
  • 1/4 cup parmesan cheese

You can add additional vegetables to this dish, like spinach, broccoli, zucchini, and other favorites. Finally, if you're looking for something light and less filling, you could simply omit the ground beef—no substitutes needed.

What Other Protein Could I Use?

You can make this lazy low-carb lasagna with ground chicken, turkey, or even pork if you prefer one of these proteins to ground beef. Adding a combination of pork sausage and ground beef to the dish will make it richer and spicier. Adding some finely minced pancetta can also be nice.

If you're looking for a leaner meat option but still want to retain the same flavor, try combining leaner ground beef with turkey or halving the meat with finely chopped mushrooms.

Is It’s Skinny Fettuccine the Only Type of It’s Skinny Pasta for this Dish?

Instructions

  1. Open It’s Skinny Fettuccine, drain, rinse, and set aside.
  2. Dice the onion and mince the garlic. In a large sauté pan, sauté garlic and onion in 2 tablespoons of olive oil for two minutes until onions are transparent.
  3. Add the ground beef and cook thoroughly until the meat is completely brown. Season the ground beef with salt and pepper.
  4. Add a cup of your favorite tomato-based pasta sauce. Sprinkle in fresh basil and mix.
  5. Add in ¼ cup of ricotta cheese and stir into the meat sauce. Add It’s Skinny Fettuccine pasta to the meat sauce, mix and heat through for 2-3 minutes.
  6. Top the dish with fresh mozzarella cheese, preferably in chunks. Move the pan under the broiler until the cheese is golden brown and bubbly. Top with grated parmesan, and enjoy!
