Ingredients

  • Fettuccine | It's Skinny
  • 1 package It's Skinny
  • 1/4 cup ricotta cheese
  • 1/4 cup ricotta cheese
  • 1 honeynut or butternut squash
  • 5-6 fresh sage leaves, chopped
  • 1 stick unsalted butter
  • 1 tablespoons balsamic vinegar
  • Salt & pepper to taste

Everyone loves this butternut squash with pasta. There’s something about the sweet taste of squash that pairs so perfectly with sage and salty cheese. It’s like fall in a bowl.

Instructions

  1. Open It’s Skinny Fettuccine pack, drain, rinse, and set aside.
  2. Peel and seed the squash, cutting it up into large chunks. Bring a pot of water to a boil and cook the squash for seven minutes until it is fork-tender.
  3. Melt the butter in a pan over low heat. Salt the butter lightly. Watch it carefully, allowing it to brown, but remove it from the heat before it starts to burn.
  4. Julienne 5-6 fresh sage leaves. Set aside.
  5. Drain the water from the squash and add it to the pan with the browned butter. Add the save, It’s Skinny Fettuccine, and ¼ cup of ricotta cheese. Mix gently until the ingredients are combined.
  6. Add grated parmesan, drizzle with balsamic vinegar, and mix together.
  7. Top with more parmesan, salt, and pepper, and dig in!
