Instructions

  1. In a large skillet, add oil, broccoli, and peppers. Cook on medium heat in a covered pan for approximately 4 minutes.
  2. Add the remaining vegetables and stock to the pan. Continue to cook on medium heat for another 5-7 minutes. Vegetables should be cooked through but still crunchy and vibrant.
