Ingredients

Angel Hair | It's Skinny
  • 2 packages It’s Skinny Pasta, Angel Hair variety
  • 1 pound of chicken cut into strips
  • 2 bunches or cups of fresh basil
  • 2 tablespoons pine nuts or walnuts
  • ½ cup extra virgin olive oil
  • ½ cup parmesan cheese freshly grated
  • 1 lemon
  • ¼ cup heavy cream
  • ¼ cup chicken or vegetable stock
  • Salt and pepper to taste

Directions

Add basil, garlic, ½ cup extra virgin olive oil, ½ cup parmesan cheese, salt, pepper, and nuts ina blender. Blend until bright green and almost smooth, then set aside.

In a skillet, add a tablespoon of oil and brown chicken. When browned, add the pesto, stock,and heavy cream. Mix well and cook for approximately 5 minutes on medium heat.

Add the It’s Skinny Angel Hair Pasta and toss well.
