Ingredients

Spaghetti | It's Skinny
  • 1 pound shrimp
  • ½ cup parmesan cheese
  • 4 tablespoons of butter
  • 1 tablespoon olive oil
  • 2 cloves garlic
  • ½ cup dry white wine
  • ¼ cup fresh chopped parsley
  • 2 diced plum or beefsteak tomatoes
  • Juice of 1 lemon
  • Pinch of chili flakes (optional)
  • Salt / Pepper to taste
  • 2 packages It’s Skinny Pasta Spaghetti

Directions

In a large skillet, add olive oil and shrimp, then season with salt and pepper. Cook shrimp for about a minute on each side, then remove

Add shallots, garlic, tomato, lemon, and white wine to the pan. Reduce the sauce for 1 minute.

When the sauce is reduced, add shrimp back into the pan, along with butter. Add two packages of It’s Skinny Pasta Spaghetti, fresh parsley, chili flakes, and parmesan cheese. Heat the pasta through, toss and serve.
