This fresh pesto is made with fresh herbs like parsley, basil, mint, and cilantro, blended with walnuts, parmesan cheese, and garlic. The best part? You can whip this dish up in less than 10 minutes! Angel Hair | It's Skinny
  • 1 clove garlic, minced
  • 1/4 cup whole walnuts
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup olive oil
  • salt & pepper to taste
  • 1/4 cup fresh parsley
  • 1/2 cup fresh dill
  • 1/2 cup fresh mint
  • 1/4 cup fresh cilantro
  • 1 teaspoon fresh lemon zest


Drain and rinse 1 package of It's Skinny Angel Hair pasta and set aside. (You could also make this with It's Skinny spahgetti or fettucine pasta!)
Toss all of your pesto ingredients into a blender - garlic, walnuts, parmesan cheese, and the fresh herbs. Season generously with salt and pepper, then blend.
Stream 1/2 cup of olive oil into the pesto mixture as it blends. You want it to be creamy, but still have a chunky texture.
Add the fresh pesto to a pan over medium heat. Add your It's Skinny pasta and mix until the noodles are well coated and heated through.
Dish up your pesto pasta. Garnish with fresh lemon zest and a sprinkle of parmesan cheese. Dig in & enjoy!
