  • 3 eggs
  • 1 cup scallions, chopped (about 3 stalks)

Instructions

  1. Drain and rinse one package of It's Skinny Rice. Set aside.
  2. Prep your veggies. Chop scallions, dice half a bell pepper, slice half a shallot, set all veggies aside.
  3. In a separate bowl, whisk three medium eggs, then set aside.
  4. In a skillet, melt two tablespoons of butter. Add ground sausage and begin to brown.
  5. Add shallot, peppers, and scallions to skillet and cook until sausage is browned.
  6. Pour in the eggs and scramble with all ingredients until eggs are fully cooked.
  7. Add the package of It’s Skinny Rice and stir in the pan until the mixture is combined.
  8. Add shredded cheddar cheese and mix until melted.
