Ingredients

  • 1/2 white onion, diced
  • 1 clove garlic, minced
  • 1 bunch fresh asparagus tops
  • 1/4 cup mascarpone cheese

  • 2 tbsp Olive oil
  • 1/4 cup Parmesan

  • 1 tsp lemon zest

Instructions

  1. Drain and rinse the package of It's Skinny Rice Shape and set aside.
  2. Chop the mushrooms, half an onion, and the garlic. Cut the tender asparagus tips from the stems.
  3. Add olive oil to a pan, heat, and sauté the onion, garlic, and mushrooms over medium. Add ¼ cup of chicken stock, stir, and allow to reduce.
  4. Add the It’s Skinny Rice Shape and mix until well combined and heated through.
  5. Stir in the mascarpone cheese. Add parmesan cheese and mix until well combined—season with salt and pepper to taste.
