Low Carb Healthy Chicken Fried Rice

Ingredients

  • Orzo | It's Skinny
  • 2 tablespoons of olive oil
  • 2-3 tablespoons of soy sauce
  • 1 small chopped white onion
  • 1 clove chopped garlic
  • 1 tablespoon fresh grated ginger (optional)
  • 1 pound of chicken breasts or thighs, diced
  • ½ cup fresh or frozen peas*
  • ½ cup diced fresh carrots*
  • 1 teaspoon sesame oil
  • 2 packages of It’s Skinny Rice
  • 2 lightly scrambled eggs
  • 2 bunches of fresh scallions chopped

Instructions

  1. Add olive oil, soy sauce, onion, garlic, ginger, and chicken to a large skillet or wok on medium heat. Cook for approximately 4-5 minutes until the chicken is cooked through.
  2. Add the peas, carrots, It’s Skinny rice, and sesame oil to the skillet. Mix well. Add the lightly scrambled eggs using a spatula. Finish scrambling the eggs and mix the ingredients well until eggs are completely cooked.
  3. Season the healthy chicken fried rice with salt and pepper to taste. Garnish with chopped green onions and serve!
