Ingredients

  • Orzo | It's Skinny
  • ½ Package It’s Skinny Rice Shape
  • ¼ teaspoon fresh basil, finely chopped
  • 1 egg yolk
  • 1/2 tablespoon olive oil
  • ¼ cup olives (we prefer Castralavano)
  • ½ medium green squash, cubed
  • 1 tablespoon of ghee, butter, olive oil (dairy-free), or avocado oil
  • 1/2 teaspoon soy sauce (optional - omit for gluten-free)
  • 1/8 tsp Salt and pepper to taste

Instructions

  1. In a sauté pan, heat the olive oil. Add the squash and olives, cooking on medium heat for about 3 minutes until softened.
  2. Add It’s Skinny Rice Shape, egg yolk, and basil and scramble for 3-4 minutes. Season this Italian scramble with salt and pepper to taste.
  3. If you want to add more satiating fat to your scramble, include a tablespoon of ghee, butter, olive oil, or avocado oil. For more umami (meaty) flavor, add ½ teaspoon of soy sauce.
