Instructions
- Open a package if It’s Skinny Orzo, drain, rinse, and set aside.
- Mince the garlic clove and chop the parsley. Preheat oven to 350.
- Add 1-2 tablespoons of olive oil to a pan over medium heat. Sauté the garlic. Add the ground beef (or protein of your choice). Cook meat until nearly done.
- Add the It's Skinny Orzo to the pan and stir to mix it with the beef. Allow the mixture to cook for a few minutes until the meat is fully cooked.
- Add the parsley, and your favorite tomato or marinara sauce, stirring to mix well.
- Cut the bell peppers in half, removing the seeds and membrane. Place the pepper in a baking dish. Fill the peppers with the meat mixture and top with parmesan cheese. Cover the dish with tin foil and bake in a 350-degree oven for 35-50 minutes (peppers should be nice and soft).
