Instructions
- Drain and rinse 1 package of It’s Skinny Orzo. Set aside.
- In a large mixing bowl, combine about ½ cup of chopped parsley with ½ pound of ground chicken (or turkey) and ½ cup of grated parmesan, along with 1 egg. Blend well to form the meatball mixture.
- Heat 2 cups of chicken stock over medium-high heat in a large pot. Add the spinach and cover the pot to simmer.
- As the stock simmers, roll out the chicken meatballs into tablespoon-sized balls. Set the meatballs into the simmering soup and cover the pot to cook over medium heat until they're golden brown (about 5-8 minutes).
- Add the It’s Skinny Orzo. Season the soup to taste with salt and pepper. Allow the rice to heat through (3-5 minutes). Add the juice from ½ a lemon right before serving the soup.
- Ladle the soup into a bowl. Garnish with parmesan cheese and additional parsley. Enjoy!
