If you want to add some meaty taste and texture, you could try mushrooms or even lightly sauteed, cubed tofu. Instructions

  1. Drain and rinse 1 package of It’s Skinny Fettuccine pasta. Set aside.
  2. In an oven-safe skillet, add 1 cup of pasta sauce, It’s Skinny Fettuccine, ½ cup of shredded rotisserie chicken, and ¼ cup of chopped cherry or grape tomatoes. Top the dish with 1 cup of fresh mozzarella cheese and about half of the fresh basil leaves.
  3. Broil the Margharita pasta in the oven for 5-10 minutes. The mozzarella cheese should be melted and lightly golden brown and the pasta sauce should be bubbling and heated through.
  4. Top the pasta with the remaining fresh basil. Garnish with Parmesan cheese and red pepper flakes, if preferred. Dish up and dig in!
