How to Make It’s Skinny Chicken Sausage Pasta with Spinach and Tomato

Angel Hair | It's Skinny
  • 1 package It's Skinny Angel Hair*
  • 2 links Applegate chicken sausage**
  • 2-3 cups spinach, chopped
  • 1/2 cup cherry tomatoes, halved
  • 2 Tbsp. olive oil
  • 1/2 cup chicken stock
  • Salt & pepper, to taste
  • Optional: 1/4 cup grated Parmesan cheese, for garnish


Drain and rinse 1 package of It's Skinny Angel Hair pasta, set aside. **you can use any variety of It's Skinny in this recipe. *this recipe would also work with spaghetti variety
Heat two tablespoons of olive oil in a skillet over medium heat.
Add the sliced chicken sausage and let it brown for 3-4 minutes. **this recipe would work with any kind of sausage links
Once the sausage is golden brown, add ½ cup of chicken stock, tomatoes, and spinach to the pan. Cook until the spinach has wilted down and the tomatoes are tender (4-5 minutes).
Add It’s Skinny Angel Hair Pasta to the pan. Toss to mix the ingredients. Cook until the pasta is heated through.
Dish up the cooked pasta on a plate and top with grated parmesan cheese. Enjoy!
