Ingredients

Fettuccine Pasta | It's Skinny
  • 2 tablespoons of olive oil
  • 1 white onion, sliced
  • 1-2 Italian sausages, chopped, casing removed.
  • 1 cup of kale, chopped
  • 1 bunch of broccolini, roughly chopped
  • ¼ cup fresh parsley, chopped
  • ½ cup fresh basil, chopped
  • ¼ cup chicken stock
  • 1 package It’s Skinny Pasta Fettuccine
  • 2-3 tablespoons Parmesan cheese

Directions

Open the package of It’s Skinny Pasta, drain, and rinse. Pat dry with a paper towel if preferred and set aside.

Slice vegetables, including onion—we're slicing the onion, not dicing because we want this dish to have plenty of great texture. Chop sausage and herbs.

Heat two tablespoons of olive oil in a pan. Add onions and sauté until soft. Add sausage and brown. Add broccolini to the pan, and add chicken stock and kale. Cover the pan with a lid to steam up and soften the vegetables.

Remove the lid from the pan after 1-2 minutes and squeeze the juice from half a lemon. Return the lid to the pan and continue to sauté until vegetables are softened to your liking.

Remove the lid from the pan. Add the It's Skinny Pasta Fettuccine and heat through for 1-2 minutes. Add ¼ cup of parmesan cheese. Remove the dish from the heat and serve. Top with additional cheese and lemon zest to enjoy this delicious guilt-free meal!
