- 1 package It's Skinny Angel Hair pasta
- 1/2 pound sausage links (4-5 links)
- 1/2 red bell pepper, diced
- 1 clove garlic, minced
- 1/2 cup mushrooms, sliced
- 1/2 shallot, sliced
- 1-2 tbsp. olive oil
- 2 springs fresh rosemary
- 1/2 cup heavy cream
- 1/4 tsp. salt, to taste
- 1/4 tsp. pepper, to taste
- 2-3 tbsp. grated parmesan cheese
Drain and rinse 1 package of It's Skinny Angel Hair pasta; set aside. (Pro-Tip: any variety of It's Skinny will work in this recipe!)
Prep the veggies. Slice 1/2 cup of mushrooms, peel and mince 1 clove of garlic, dice 1/2 of a red bell pepper, and thinly slice 1/2 of a shallot.
Cut the sausage links into small, even pieces (so they cook quickly but evenly).
Heat two tablespoons of olive oil in a skillet over medium/medium-high heat. Add shallots and garlic, saute for 2-3 minutes. Add rosemary springs (whole -- you will be removing them later) and sliced bell peppers, saute for another 2-3 minutes. Add sliced mushrooms, cook for another 2-3 minutes.
Add sausage to the pan with the vegetables. Brown the sausage until it is completely cooked through, about 7-10 minutes.
Add heavy cream, salt, and pepper. Bring the cream sauce up to a simmer for a few minutes, then remove the springs of rosemary. Add your It's Skinny pasta and toss to combine. Top with freshly grated Parmesan cheese, then dish up, and dig in!
