  • 1 bunch fresh basil, roughly chopped

CAN I ADD MEAT TO THIS LASAGNA?

This recipe goes well with ground beef, ground chicken, or turkey. You could add crumbled sausage, too, if you're looking for a spicy option.

Soy crumbles or meatless meat would be appropriate in this recipe if you’d like to keep it vegetarian. However, keep in mind that some types of vegetarian meat substitutes can be high in carbohydrates. If you are watching your carb intake on a keto diet, you’ll want to calculate the difference carefully. Sauteed tofu or walnut "meat" can also be a nice choice to keep carb counts low.

I LOVE VEGGIES—WHAT ELSE CAN I ADD?

We've got spinach, zucchini, and mushrooms, along with a garlic and onion marinara sauce, making this vegetarian lasagna veggie-rich! But if you want to get in a few more vegetables (or swap out for your favorites), others could play well in this recipe. Eggplant slices could be nice. We use basil leaves, but any fresh herbs—oregano, marjoram, rosemary, and parsley would also be delicious here. It's all about the Italian seasoning. You could spice things up with red pepper, too.

Artichokes, broccoli, broccolini, bell peppers, and even asparagus would be a nice addition to this vegetarian lasagna. Cauliflower and Brussels sprouts may be too chunky for the sauce, but you could certainly use finely chopped vegetables of any sort. Broccoli slaw, for example, can cook down and add extra veggies to your sauce. You could also try cabbage, kale, or another leafy green in place or in addition to spinach.

CAN I MAKE THIS WITH A CREAMIER SAUCE?

Love cheese? We do too! You can indulge in a more decadent, richer sauce when you go low carb! While the recipe's ricotta, mozzarella, and parmesan combination makes it taste like classic lasagna, you could use many different cheeses and even cream to make the sauce richer.

Consider adding heavy cream to the tomato sauce. You could swap the ricotta for cottage cheese if preferred. Cream cheese can also work in this recipe in a pinch (look for a herbed variety for extra flavor). Mozzarella melts like no other, but provolone would also be a good choice. You could use Burrata or Gouda too. Pecorino is typically the closest swap for parmesan.

Instructions

  1. Drain and rinse 1 package of It’s Skinny Fettuccine pasta; pat excess moisture dry with paper towels, if preferred, and set aside.
  2. Slice the mushrooms and zucchini with a sharp knife. Pro-tip: use a vegetable peeler to get perfectly thin zucchini strips.
  3. Heat 2 tablespoons of olive oil in a skillet over medium heat. Add mushrooms and 2 cups of roughly chopped spinach. Saute until the spinach wilts and cooks down. Add the zucchini, salt, and pepper. Saute the vegetables until tender—about 5 minutes.
  4. Add your favorite tomato or pasta sauce. Toss to combine and heat it until the sauce begins to simmer. Toss in the It’s Skinny Fettuccine. Mix the ricotta cheese and parmesan cheese. Stir until all ingredients are well combined.
  5. Top your lazy vegetarian lasagna with the shredded mozzarella cheese. Move your skillet to the oven's broiler and broil for 3-4 minutes until the cheese is melted and golden brown. Note: you may want to put an aluminum foil covered baking sheet under the skillet to prevent any spills in the oven. Garnish with fresh chopped basil! Enjoy!
