Ingredients

Rice | It's Skinny
  • 1 package It's Skinny rice
  • 1/2 green bell pepper, sliced
  • juice from 1/2 a lemon
  • 1/2 cup mayonnaise
  • 1/4 cup chipotle
  • 1/2 cup black beans, drained
  • 1 clove garlic, minced
  • 1 boneless, skinless chicken breast
  • 1 tablespoon olive oil
  • 1 stem (3-5) Cherry tomatoes (for garnish)
  • 1/2 avocado, sliced (for garnish)
  • 1/4 cup cilantro, chopped

Directions

Drain and rinse 1 package of It's Skinny rice and set it aside.

Prep your veggies; slice 1/2 of a bell pepper, mince 1 clove of garlic, and chop the cilantro.

Prepare the chipotle mayo sauce with 1/2 cup of mayonnaise, 1/4 cup of chipotle, and a squeeze of fresh lemon juice (about 1/2 of a lemon). Mix until well combined and set aside.

Heat olive oil in a pan and add the sliced chicken and peppers. Cook until the chicken is cooked through, then add the garlic and cook for another minute.

Add It's Skinny rice and black beans. Mix well and cook for 3-5 more minutes, enough for the rice to cook through.

Pour the chicken and rice into a bowl and top with your garnishes - avocado, sliced cherry tomatoes, and cilantro. Drizzle on the chipotle mayo dressing, dig in, and enjoy!
