Ingredients

Angel Hair | It's Skinny
  • 1 package It's Skinny Angel Hair
  • 1 cup Leeks, chopped
  • 1/3 cup grated Parmesan cheese
  • 1/2 package of Spinach
  • 6 oz. Feta cheese
  • juice from 1 Lemon
  • 1/4 cup Dill
  • 2 tbsp Olive Oil

Directions

Drain and rinse 1 package of It's Skinny Angel Hair pasta, set aside.

In a pan, add 2 tablespoons of olive oil. Add the chopped leeks, saute for about 3 minutes until they soften.

Add spinach - about half of a large bag, it should fill the pan. Place the lid on the pan and saute until the spinach is cooked down.

Once the spinach is cooked down, add fresh dill and juice from 1 lemon.

Add It's Skinny Angel Hair pasta, cubed feta cheese, and grated Parmesan. Mix until everything is well combined.

Dish up the spinach pie pasta and dig in!
