Ingredients

  • Angel Hair | It's Skinny
  • 2 cups fresh cherry tomatoes
  • 1 shallot thinly sliced
  • 2 cloves sliced garlic
  • 2 tablespoons olive oil
  • 1/2 cup fresh basil chopped
  • ¼ cup white wine (dry wine for keto-friendly)
  • ¼ cup chicken stock (vegetable stock can be used for a vegetarian-friendly dish)
  • 2 tablespoons butter
  • ½ cup grated Parmesan cheese
  • 1/8 tsp Salt
  • 1/8 tsp Pepper
  • 1 packages It’s Skinny Pasta Angel Hair

Directions

  • 1 Spread your cherry tomatoes on a sheet pan, adding olive oil, salt, and pepper. Roast at 400 degrees for 15 minutes or until the tomatoes are soft and just starting to pop. Pour the tomatoes and all the juice into a separate bowl and set aside.
  • 2 In a large skillet, heat one teaspoon of olive oil. Add the shallots and garlic on medium heat, so they just start to brown. Once the garlic is brown, add the white wine. Reduce the mixture by half, cooking for approximately 2-4 minutes.
  • 3 Add the tomatoes and chicken stock to the pan, cooking another 2 minutes. Add the butter and the two packages of It’s Skinny Pasta Angel Hair. Toss well to heat through. Add half the cheese and half the basil, tossing again using the tongs.
  • 4 Remove the dish from the heat and garnish using the rest of the cheese and basil. Voila! Dinner is served.
