Are you ready to make some dinner? All you need are some simple ingredients, a sheet pan, and a sauté pan, and you're ready to start.

  • 2 cups of fresh cherry tomatoes
  • 1 shallot thinly sliced
  • 2 cloves of sliced garlic
  • 2 tablespoons of olive oil
  • 1 whole bunch fresh basil chopped
  • ¼ cup of white wine
  • ¼ cup of chicken stock (vegetable stock can be used for a vegetarian-friendly dish)
  • 2 tablespoons of butter
  • ½ cup of grated Parmesan cheese
  • Salt
  • Pepper
  • 2 packages of It’s Skinny Pasta Angel Hair

Spread your cherry tomatoes on a sheet pan, adding olive oil, salt, and pepper. Roast at 400 degrees for 15 minutes or until the tomatoes are soft and just starting to pop. Pour the tomatoes and all the juice into a separate bowl and set aside.

In a large skillet, heat one teaspoon of olive oil. Add the shallots and garlic on medium heat, so they just start to brown. Once the garlic is brown, add the white wine. Reduce the mixture by half, cooking for approximately 2-4 minutes.

Add the tomatoes and chicken stock to the pan, cooking another 2 minutes. Add the butter and the two packages of It’s Skinny Pasta Angel Hair. Toss well to heat through. Add half the cheese and half the basil, tossing again using the tongs.
