Spicy Lobster Fettuccine

Ingredients

  • 1 package It's Skinny Fettuccine
  • 5 hot cherry peppers
  • 1/2 shallot, minced
  • 1 clove garlic
  • 1-2 cups marinara sauce (your favorite brand)
  • 1 bunch fresh basil
  • 1/4 cup Parmesan cheese
  • 1 cup mascarpone cheese
  • 1 tablespoon lemon juice and zest
  • 1 tablespoon olive oil
  • 1/8 teaspoon salt & pepper, to taste
  • 6 oz. meat from 1 lobster

This low-carb fettuccine recipe requires a little more cooking than some of our other It’s Skinny recipes, BUT it’s well worth the effort. Don’t worry—it only takes about half an hour to whip up this spicy lobster pasta recipe because we know you have other things to do with your time (*wink-wink*).

Hot peppers contain capsaicin, the chemical that causes the hot sensation when you bite into a chili or jalapeno. Buy lobsters from your local fishmonger or grocery store, where they're kept in tanks. Look for an active lobster. When you're ready to cook, put the lobster in a pot of boiling water with a steaming basket to steam them for 2-3 minutes. The meat will still be raw, but you can easily remove it from the shell. Use kitchen shears or a knife to separate the meat from the hard exterior.

Some people are concerned about boiling or steaming live lobster. If you prefer, you can freeze the lobster for 30 minutes before steaming it to sedate them. Otherwise, you can purchase raw fresh lobster tails and use the meat from the tails for this dish.

HOW CAN I TONE DOWN THE SPICE? HOW CAN I SPICE THIS DISH UP EVEN MORE?

If you prefer the idea of “less is more” when it comes to spice, you can take it down a notch by omitting the red pepper flakes and cutting back on the number of hot cherry peppers. Try using a few mini red peppers instead. These will add sweetness and flavor without the heat.

You can also play with other varieties of peppers like fresno chile, hatch, or jalapenos. To kick up the heat, increase the red pepper flakes or add a spicy cayenne. Just be sure that your date is on board with the extra spiciness.

IS THERE ANOTHER CHEESE I COULD SWAP FOR MASCARPONE?

Mascarpone cheese is an Italian classic soft cheese. It’s used in tiramisu and many other Italian dishes. Most grocery stores these days carry mascarpone, but if you can’t find any (or you aren’t a fan), you have a few options to substitute for mascarpone cheese.

Cream cheese is the most classic substitute for mascarpone. They're similar in texture and flavor, although cream cheese is slightly thicker (you could thin it with some cream). Ricotta cheese would also work here. Small-curd or whipped cottage cheese would also be a good mascarpone swap in a pinch. If you prefer, you could also use goat cheese for a different flavor.

Instructions

  1. Drain and rinse the pack of It's Skinny Fettuccine and set aside.
  2. In a small bowl, mix 1/2 cup mascarpone cheese with 1 tablespoon of lemon zest, lemon juice, and 1/4 cup chopped basil. Mix until well combined.
  3. Chop up all your veggies. You'll want a fine dice on 5 cherry peppers, 1/2 a shallot, and 1 clove garlic.
  4. Steam one whole lobster for 2-3 minutes over medium-high heat, which will allow you to remove the lobster meat while it's still raw.
  5. Add 1 tablespoon of olive oil to a pan over medium heat. Add your veggies and sauté for 3-4 minutes.
  6. Add 1-2 cups of your favorite marinara sauce. Add salt and pepper to taste and allow the sauce to simmer for about 15 minutes.
  7. Add lobster meat to the sauce and simmer for an additional 5 minutes.
  8. Add the It's Skinny Fettuccine to the sauce. Mix it well and allow the pasta to heat through for 2-3 minutes.
  9. Serve up the lobster fettuccine in a bowl and top it with a large scoop of lemon-mascarpone cheese, parmesan, and a teaspoon of hot pepper flakes (adjust for your heat preference). Enjoy!
